Olive groves
The olive groves of Casa Iuorio extend over our land in Palomonte (SA). They are grown following the dictates of sustainable agriculture, without using chemicals. Trees grow in healthy and natural environments. This is also our commitment to promoting the biodiversity of the area. The olive harvest is done by hand.
Processing
After the harvest, it is still us from the Casa Iuorio farm who take care of the transformation, in the laboratory inside the farm, a sort of large kitchen immersed in the fields, certified according to all hygienic-sanitary regulations.
The olives are selected, washed under running water, crushed with a special hammer, pitted and then put in brine. After a few days they are placed in jars with plenty of extra virgin olive oil.
Each phase of this long preparation is carried out by the expert hands of properly trained local women. Even the jars are prepared by hand, right up to the labeling.

Pairings
They can be eaten as a side dish or in other preparations with vegetables, adding them, for example to the escarole in a pan. Also excellent in salads, to fill sandwiches and wraps. To accompany meats and cheeses.
